Blueberry Scones

I have been asked for the recipe for the scones Ro and I made the day of the Royal Wedding. How silly of me to have not posted it in the first place! While not technically scones, as this recipe uses eggs and is morelike a cake in that respect, they are still tender, and tasty, and practically exploding with blueberries.

You'll need:
  • 2C Flour
  • 3T Sugar
  • Dash Salt
  • 2.5t Baking Powder
  • 1/4C Milk
  • 3/4C Butter
  • 2 Eggs
  • 1C Blueberries
For the glaze:
  • 1C Confectioner's Sugar
  • The Zest of 2 Clementines
  • Clementine Juice
Combine dry ingredients in a large bowl. Toss in blueberries and coat with flour mixture to suspend. Beat together milk, butter, and eggs in a small bowl, then stir into dry ingredients until well combined.

Bake in a 350° oven for 25 minutes or until a toothpick comes out clean. (I baked mine on a pizza stone, and it took them an hour- but I might also be dealing with antiquated technology. Oven from the 1950's!)

Remove from oven, and slice into eighths. Let cool.

To make the glaze, combine confectioners sugar and zest in a small bowl. With a fork, whisk in enough clementine juice to make runny. Drizzle over cooled scones and let sit until set.

Enjoy with a cup of black tea and a wedding on the side!
