Happy Birthday

 On the 13th, my husband turned 28. There are two things in the world he loves with chocolate; peanut butter, and coconut. Unfortunately, this year there wasn't any money. Literally none. So I couldn't go out and buy him any coconut, however, already in the house we had the fixings for dark dark dark chocolate cupcakes with whipped up peanut butter frosting.

And so that is what I made.

Almost Black Chocolate Cupcakes
(Makes two dozen.)


2C Sugar
1 3/4 C AP Flour
3/4 C Cocoa (I used Hershey's Special Dark)
1 1/2 t Baking Powder
1 1/2 t Baking Soda
1 t Salt
2 Eggs
1 C Almond Milk
1/2 C Olive Oil
2 t Vanilla Extract
1 C Boiling Water


Preheat oven to 350°.

In a large bowl, sift together the sugar, flour, cocoa, baking powder, baking soda and salt using a whisk. In a medium bowl, beat together the eggs, milk, oil and vanilla. Add the wet ingredients to the dry, stirring constantly. Add the boiling water last, beating until smooth.

Grease a cupcake pan or line with paper liners and fill 3/4 of the way with batter. Bake for 20 minutes, or until a skewer comes out clean.

Fluffy Peanut Butter Frosting


1 C Confectioner's Sugar
1 C Peanut Butter
5 T Butter, softened
3/4 t Vanilla
1/4 C Almond Milk


Emphatically whip together ingredients until light, fluffy and amazing. Spread on top of cupcakes, not too generously! This frosting is delicious, but it is very, very rich. =)
